What a challenge! I was trying to replicate the logo given to me by a client. She said this is the logo of their project at work and wanted it on a retirement cake. Half chocolate, half vanilla 11x15 sheet cake, with LOTS of buttercream icing and marshmallow fondant logo.

So my first attempt at brighter more clear photography didnt quite work 100% but I think Ive taken a step in the right direction. Now that I have my own computer back I might just try a little more photo editing too! I did a second post today because I HAD to try this yummy recipe that I found. Its for 'Golden Cupcakes' from the book Vegan Cupcake Take Over the World. The cupcakes themselves are vegan but the strawberry frosting contains regular margarine.
The cupcakes themselves are amazing. This picture was short one cupcake because I ate one right out of the oven....hence the strange angle of the picture....to cover up the empty space. My husband gave these cupcakes the thumbs up- even if they contain the word 'vegan'.
I have some experimenting yet to do but not too disappointed with my latest creation. I will have to make a less sweet lemon version at some point. This cakelet is chocolate strawberry. A nice slice of this would go well with a nice strong black coffee. Its sweet, but then again, its also a dessert so thats ok.
I have recently acquired a new cupcake cookbook and would love to experiment with those recipes in cake form. I can forsee some of the fillings, Boston cream or some of the mousse recipes complimenting a basic chocolate or white cake very well. The ideas of the cakelet is that there are many layers of cake between yummy layers of icing.
I hope to run to the store today and pick up a couple limes. I plan on making some coconut lime cupcakes today.
